My darker self split off and followed, just behind me, as I walked in the Luxembourg Gardens, sat in the cafe drinking wine, walked through Notre Dame past the reliquary that held a fragment of the One True Cross.
It was not a completely unusual sensation for me. I d been afraid much of my life. What was new was that the presence was closer and more familiar. Had my mother risen up from her spot on the floor to follow me? Or was my dark double tracking me? Were the two entities the same? All I know was that in Paris I felt haunted, like a double exposure photograph that shows a figure and then a milky specter behind. The revelation was horrible but also holy.

The practice of tailoring books for particular markets seems to be quite new. When I began to work as an editor thirty years ago, we sometimes debated whether ki zi a book needed a glossary or not, but the idea of rewriting a text to make it more accessible to a foreign readership never arose. The changes to your text are clearly small, but I ve seen revised foreign ki zi editions that are substantially different to the originals. I suppose ki zi it s tied up with a weakening sense of the text as definitive or sacrosanct, and a new conception of it as a dynamic, customized product. Recently ki zi I heard a writer on the radio referring to her books as a range , as if she were a fashion ki zi designer.

Someone reading your Granta extract might assume you are one of those writers. The setting and language are pungently local. In fact, your book presents a strikingly wide range of settings, moving with ease from Berlin to Tokyo to Milan to Cape Town. The story War, Blossoms draws a range of locations together ki zi in a provocative way. The narrator s Japanese friend Hisashi, whom he met in London, and with whom he travelled to Japan and Vietnam, arrives unexpectedly in South Africa. Despite the narrator s resistance, Hisashi makes himself part of his life. The narrator must make a place, with difficulty, for the global, the exotic.
Although some of your stories are centrally concerned with belonging, I suspect that the question of locality is more interesting ki zi to my generation than yours. Does it matter whether you write from one place or many? Did you set out to produce a collection with a cosmopolitan sweep or did it just come out that way? Your position is complicated by the fact that your first language is a small one. You were able to bring the world home in Afrikaans, but if you are to go back out into the world, you need English. The shift to English ki zi is an index of social and political change ki zi in your book as when the old farm Twyfelsand becomes ki zi Twilight Lodge , a game farm for foreign hunters. But the book is not just about loss. Your restless, ki zi displaced South Africans ki zi are able to join worlds ki zi together , as you put it somewhere, and that is surely a gain.
To consider your last point first: recently, when I was writing a piece on translation, I had to think about why translating my own stories hadn t felt too difficult. A couple of hours into our acquaintance, I was beginning to see the competitive side of Uncle Sheriy


Of all of the minorities in this country, where even the minorities are masses, we Parsis must be the smallest. There were never any more than a few thousand reeves of us to begin with, and now, outside of Bombay (which we more or less made, even if the Marathas won t allow for it now) and the towns of coastal Gujarat, where we first arrived all those centuries ago, we don t even get up to a hundred in any place. A family emigrating to New York or Toronto, reeves a nasty car accident, two women marrying outside reeves the faith such events require that the demographic sums for us be done all over again. Up in Delhi, a single man and his dog would constitute a Parsi mob. At our very own weddings and Navjotes, we re outnumbered by non-Parsi spouses, children, retainers, waiters by the rest of Indian civilization, reeves each person perfectly programmed to proliferate. Somehow we have managed to content reeves ourselves with daily infusions of fried eggs, when the rest of India likes them fertilized. Just by leaving Bombay for San Francisco on Monday night, I was probably tilting the scales somewhere possibly more Parsi men in Bombay would now be gay than not, or would live with their mothers reeves than not.
Never a great patron reeves of the faith, I d always stood, from the time I arrived awkwardly into adulthood, at a goodly remove from the institutions and festive occasions of our community. Later, psychoanalysis estranged me further from groupthink. It annoyed me that because of our declining numbers reeves the elders of the faith always kept insisting we had to all hold together. The Bombay Ahmedabad highway was a honking, trilling, swaying parade of Parsis headed to Udvada, reeves perhaps the longest continuous line my people had formed since we d arrived in India deep in the mists of time and been led single file before reeves the king of Gujarat to argue for our fitness and plead for his mercy. Every car that overtook Zelda (I wasn t going to be driving at the same speed as some of these jokers) was manned by a beaked nose; at the windows matriarchs and their daughters-in-law fanned themselves with copies of Jam-e-Jamshed and fair, rosy-cheeked children chirped and sang; on the windscreens were Bombay Parsi Punchayet stickers and the odd one for the radical group ARZ (Association for the Reform of Zoroastrianism). On this one day we pleasure-loving Parsis were laying siege to the state of Gujarat, that joyless place of prohibition, vegetarianism, thrift, riots and stepwells. The men were being encouraged to race one another; cutting in and out, they shouted friendly jibes at every positional gain. On a day like this, in a caravanserai like this, my Parsiness was the face of me.
An even prouder Parsi sat next to me: Zahra Irani, in a modest yet sexy black-and-white salwar kameez, her hair covered by an improvised black dupatta-chador, her face flushed with a contagious pleasure and excitement. And on this strangest and most thrilling of dates we had, for better or for worse, reeves a consignment of Parsi cargo to deliver to Udvada. In the back seat, Zahra s uncle Sheriyar now moved his substantial frame from one window to the other and, in emphatic Gujarati, reeves declared, If I d been driving, we d have reached Udvada by now. Zahra gave a tinkling laugh and said in her delicious American-accented Gujarati, Come on, Uncle! There s only two kinds of people in the world who re always sure of themselves: the true believer and the back-seat driver.
What? Don t you remember when I drove you all to Udvada when you were a teenager? Out of Bombay like this and into Udvada like that, just like how babies leave the womb and pop into life. And that was on the old, bad road, before the highway was built.

When I d met him at seven that morning, he d seemed a mild old coot, reticent, courteous, his English a strange piece of patchwork, just like the Indian mind, his prosperous stomach the sign both of advancing age and the success reeves of his many businesses and projects (among them a bakery in Ghatkopar and a piggery in Karjat, I was told). Only a certain gleam in his eyes, I saw now, gave away the story of what kind of soul he really was. If you happen to be friends with one of the world s most fearsome food critics, don t cook for him. Adrian Gill stands over my tinfoil tray of plump, charred croissants and nods politely. You re baking carguru again? he notes, with a touch of concern. You know, only old women and depressives bake. He lifts one and takes a bite. He nods again. Well, it has good flavour, he says I don t remind him he helped me pick out which flour and butter to use, leaving the water and yeast totally up to me but if you really want to learn how to make croissants you should do it seriously.
I watch the croissant travel back to its tinfoil home. The ideal croissant, Adrian says, is chewy on the inside and flaky on the outside. I don t quite want to know where I ve failed. Yes, I do, I want to learn, I say. Never mind that I don t particularly eat the stuff or that I have other things to do. At that moment, it becomes terribly important to me to bake properly.
I grew up in a house with extraordinary cooks. My grandmother, my brother, everyone. carguru But my mother, Ghinwa, cooks so beautifully there is music in how she conceives and handles food. In exile from her home country of Lebanon, first in Syria and then, when my family returned home to Karachi, in Pakistan, she has carried the weight of her memories in recipes. They are never written down, not that I notice anyway.
There is an alchemy to how she cooks part of it travels down the telephone line, speaking with her mother in the seaside carguru port of Tripoli; another part come from the memory carguru of what she ate as a child growing up in Beirut. How the sweets tasted and what the streets smelled like after the evening prayers of Ramadan. She went vegan some years ago, and how to eat ethically, sustainably and without cruelty now informs her interest in food.
All this is to say, I never felt the need to cook growing up. It would have been embarrassing, unwarranted. But several years ago, in the limbo period between writing and editing, feeling lonely in Karachi, I discovered the kitchen. A dear friend gave me the Good Housekeeping Cookery Book and I pored through it over the course of one spring, tackling the book one recipe a day, like Julie and Julia , but without the voice-overs or blogging (till now).
I don t know why people cook; anthropologists will say we cook to connect with cultures, carguru because we are creative beings. They will say that for a captive, locked away from something or kept apart from their people, cooking is a way of connecting with freedom. I am still learning about why I cook. For all those reasons, yes. But it began when I stopped wanting to be alone. Writing is a lonely occupation. It requires solitude. I am very good at being alone, but I realized I needn t be that good at it.
Making viennoiserie pastries made from yeast-leavened dough such as croissants, brioche, beignets and so on is not for escapists, tourists who take to cooking carguru just to keep busy for an hour or two. It s labour. It requires patience, calm and curiosity, and it requires someone who has seventy-two hours to spare for rolling, buttering, flouring and wrapping and refrigerating. As a writer, my life is built around a schedule like that. There is something soothing, something gratifying about baking and whiling away time thinking about a story and obsessing about a fictional character. But I had done bread and I had done choux. The time had finally come for croissants but first I would have to witness a real life tourier.
The Wolseley is a London institution. Built in the style of the old grand European cafe, it is one of the few places in London with its own tourier. carguru A tourier, from the French to turn , is the specialized name for a chef who works with viennoiserie. I have two weeks before I return to Karachi.
